Crunchy Asian Lettuce Wraps - cooking recipe

Ingredients
    1 head bok choy, finely shredded
    1 small head broccoli, snapped into small florets
    6 green onions, minced
    7 -8 baby carrots, chopped very fine
    1/3 cup cilantro, chopped
    1 cup extra firm tofu, cubed
    1/3 cup olive oil
    1/4 cup soy sauce
    1/4 cup brown sugar
    2 tablespoons sesame oil
    3 teaspoons red pepper flakes, crushed
    sea salt
    3/4 cup cashews, chopped
    iceberg lettuce leaf
Preparation
    Mix together all vegetables, then mix dressing ingredients. Let marinate at least one hour, then spoon into lettuce leaves, sprinkle cashews over filling. Wrap and secure with toothpicks.
