Swedish 1-2-3 Vinegar - cooking recipe

Ingredients
    3 cups water
    2 cups sugar
    1 cup white wine vinegar
    1 carrot, peeled and sliced
    1 onion, sliced
    5 white peppercorns
    2 bay leaves, preferably fresh
    2 allspice berries
Preparation
    Combine all the ingredients in a saucepan and bring to boil over medium heat.
    Stir until all the sugar is completely dissolved.
    Remove from heat and let cool.
    Pour the cooled vinegar into a jar, seal and refrigerate.
    Allow to marinate six hours, or overnight.
