Kenny'S Birthday Pumpkin Pie - cooking recipe

Ingredients
    Crust for 9-inch pie
    2 cups all-purpose flour
    1 teaspoon salt
    2/3 cup shortening, plus
    2 tablespoons shortening
    4 -5 tablespoons cold water
    Pie filling
    2 eggs, slightly beaten
    1 -16 ounce solid pack pumpkin
    3/4 cup sugar
    1/2 teaspoon salt
    2 teaspoons cinnamon
    1 teaspoon ginger
    1 teaspoon clove
    1 teaspoon nutmeg
    1 (12 ounce) can evaporated milk
Preparation
    Pie crust directions:
    Measure flour and salt into bowl. Cut in shortening. Sprinkle in water, 1 tablespoons at a time. Mix well. Shape into ball and roll out on flour covered counter. Place in pie plate.
    Pie filling directions:
    Heat oven to 425. Mix ingredients in order given. Pour into pie crust. Bake at 425 for 15 minutes. Reduce heat to 350 and continue baking for 35-45 minutes. Serve with lots of whipped cream! Real whipped cream!
