Prosciutto And Tomato Sauce - cooking recipe

Ingredients
    1/4 cup olive oil
    1/2 cup chopped onion
    1/4 cup diced carrot
    2 ounces prosciutto, diced
    1 (28 ounce) can plum tomatoes with juice
    salt and pepper
Preparation
    Heat oil in a medium skillet; add onion and carrot. Saute until tender, about 5 minutes.
    Add prosciutto; saute 5 minutes.
    Add tomatoes; heat to boiling, stirring and breaking up tomatoes with the spoon.
    Simmer until sauce is slightly reduced and thickened, about 25 minutes.
    Season to taste with salt and pepper.
