Blue Potato Oven Fries - cooking recipe

Ingredients
    3 lbs potatoes (blue, red, or fingerlings)
    2 tablespoons olive oil
    1 teaspoon course ground salt
    1/2 teaspoon ground pepper
Preparation
    Preheat oven to 450 degrees.
    Cut potatoes into 1/2\" wedges. Drop in cold water and soak 45 - 60 minutes.
    Thouroughly drain potatoes and pat dry with paper towels.
    Toss potatoes with oil and salt and pepper.
    Place in shallow baking pan and bake 20 minutes; stir and cook an additional 20 minutes.
