Derby Vegetables - cooking recipe
Ingredients
- 
                            3 cups broccoli florets
 
2 medium carrots, cut in half lengthwise and then sliced in 1/8 inch slices
1 large red bell pepper, large dice
2 cups small mushrooms, stemmed and cut in half
1/8 - 1/4 cup fresh cilantro, chopped
2 tablespoons butter
salt and pepper
Preparation
- 
                            Steam the vegetables for 5 to 6 minutes or until partially cooked, set aside.
 
Melt the butter in a skillet, add steamed vegetables and cilantro; quickly saute until almost tender.
Sprinkle with salt and pepper and serve immediately. The vegetables should remain slightly crunchy for best flavor.
