Green Tomato Chow Chow - cooking recipe

Ingredients
    1 gallon green tomato
    1 cup water
    5 bell peppers
    5 anahiem hot peppers
    8 onions
    3 stalks celery
    1 head cabbage, large
    1/2 cup salt, kosher
    3 cups vinegar
    2 cups sugar
    2 teaspoons cinnamon
    2 teaspoons turmeric
    2 teaspoons allspice
    2 teaspoons dry mustard
    4 lemons, juice of
Preparation
    grind all the vegetables.
    put in a large kettle.
    bring to a boil.
    with the water,spices ,vinegar ,salt and sugar
    cook down for one hour adding water as needed.
    add lemon juice at very end.
    pour into hot jars and seal.
