Ground Turkey Taco Meat - cooking recipe

Ingredients
    1 (1 1/4 lb) package ground turkey
    1 onion, diced
    2 -3 garlic cloves, minced
    1 (14 ounce) can tomatoes and green chilies, like Original Rotel
    1 (14 ounce) can tomatoes and habaneros, like Hot Rotel
    1 teaspoon oregano
    1/2 teaspoon dried cilantro
    1 teaspoon chili powder, more to taste
    1/2 teaspoon Mexican chili powder
    1/2 teaspoon paprika
    1 teaspoon ground cumin, more to taste
    1/2 teaspoon salt, more to taste
    1/4 teaspoon white pepper, can use black if you don't have white on hand
    1/2 cup dark beer
Preparation
    In a skillet, add the meat and onions -- NO OIL. Brown the meat until almost no more pink, then add the garlic and finish cooking.
    Drain the meat in a colander, and rinse with water.
    Return the meat to the skillet and add the remaining ingredients. Stir together and let simmer until the beer cooks down.
    Taste after it reduces by about half, and adjust the seasoning to taste.
    Serve as tacos or on a salad, or store in the fridge or freezer until ready to use.
