Sweet Potato And Sage Soup - cooking recipe

Ingredients
    1 tablespoon olive oil
    1 onion
    1 leek
    1 carrot
    2 sweet potatoes
    1 tablespoon fresh sage, chopped
    1 tablespoon fresh parsley, chopped
    2 pints vegetable stock
    salt
    pepper
Preparation
    Saute chopped onion, leek and sgae in olive oil for a few minutes until golden.
    Add carrot and sweet potato cut into cubes and saute for 2 minutes.
    Add hot stock.
    Simmer for 45 minutes.
    Add parsley.
    Blend soup.
