Caribbean Jerk Chicken Packets - cooking recipe

Ingredients
    4 chicken breasts, boneless, skinless
    8 ounces Caribbean jerk marinade (I use KC Masterpiece)
    4 medium red potatoes, washed, thinly sliced with the skin on
    1 large onion, sliced into rings
    garlic, minced to taste
    1 (15 ounce) can diced tomatoes with jalapenos
    1 cup Caribbean jerk marinade, divided
    red pepper flakes, to taste (optional)
    splash Pickapeppa Sauce (optional)
Preparation
    Place chicken breast in large zip lock baggie and add jerk marinade. Allow to sit for at least 1 hour -- overnight even better! Taking 2 sheets of foil per person -- spray foil -- add chicken, and divide remaining ingredients between each of the four packets. Add 1/4 cup of marinade to each packet and splash of pickapeppa if using Cook on the grill on low heat for 30 minutes -- or until juices are clear.
