Great Roast - cooking recipe

Ingredients
    6 -8 lbs boneless beef roast (not standing rib although I use a standing rib)
    salt
    pepper
Preparation
    Anytime from 9AM until mid-afternoon you can start this roast.
    Preheat oven to 350\u00b0F.
    Salt and pepper the roast and place on shallow open roaster and roast in preheated oven for 1 hour. Turn oven off and do not open oven door!
    1/2 hour before dinnertime, turn oven back to 350\u00b0F.
    The roast will be rosy rare all the way through.
