Orange And Jicama Quinoa Salad - cooking recipe

Ingredients
    3 cups cooked quinoa
    1 1/2 cups diced peeled jicama
    1/2 cup packed fresh cilantro leaves, chopped
    1/3 cup chopped red onion
    1 (15 ounce) can mandarin oranges, drained and coarsely chopped
    1 tablespoon minced seeded jalapeno pepper
    3 tablespoons lime juice
    2 tablespoons olive oil
    1 tablespoon honey
    salt and pepper
Preparation
    In a large bowl combine quinoa, jicama, cilantro, red onion and oranges.
    In a small bowl, combine remaining ingredients. Season to taste with salt and pepper. Cover and refrigerate for at least 30 minutes before serving.
