Palm Court Scampi Provencale - cooking recipe

Ingredients
    20 large shrimp
    1/2 cup tomatoes, diced
    1 tablespoon shallot, chopped
    1 teaspoon garlic, chopped
    2 tablespoons parsley, chopped
    6 ounces butter
    1/2 cup white wine
    1/2 teaspoon oregano
    1/2 teaspoon basil
    2 ounces olive oil
    salt & pepper, to taste
Preparation
    Wash shrimp, peel and butterfly, leaving tails on.
    Preheat oil in skillet.
    Place shrimp in pan for approximately 2 minutes on each side.
    Remove from pan.
    Add butter, garlic and shallots, and saute lightly.
    Add wine, seasonings and tomatoes.
    Bring to a boil.
    Add shrimp and heat quickly, then serve immediately.
