Mooreton Deer Sausage - cooking recipe
Ingredients

50 lbs venison
50 lbs fatty pork
2 lbs tender quick
6 ounces pepper
1 ounce nutmeg
8 ounces mustard seeds
1 tablespoon garlic powder
1 ounce ground marjoram
Preparation

Place 50/50 mixture onto grinder , sprinkle seasonings on meat, add slowly 2 cups of cold water and mix seasonings through meat evenly. Perform 1st grind, add water as needed to incorporate seasonings. Grind a second time with medium blade.
Stuff into pork casings and smoke.
