Zesty Spanish Rice Low Fat - cooking recipe
Ingredients

1 onion, chopped
1 (7 ounce) can salsa verde (I used Herdez brand mexicana picante)
1/2 green pepper, chopped
2 small tomatoes, chopped
1 -2 garlic clove, minced
1 teaspoon olive oil
1 cup jasmine rice
1 cup water
salt and pepper
fresh cilantro, finely chopped
Preparation

1. Heat the olive oil over medium-high heat in a deep frying pan.
2. Saute rice until lightly browned.
3. Add onion, green pepper, garlic, tomatoes, salsa verde and water.
4. Simmer, covered until water is absorbed. (approximately 15 minutes).
5. Fresh chopped cilantro may be added just before serving.
