Quinoa, Feta & Spinach Salad - cooking recipe

Ingredients
    7 ounces quinoa
    2 tablespoons olive oil
    2 tablespoons red wine vinegar
    1 garlic clove, crushed
    2 teaspoons ground cumin
    1 pinch salt and pepper
    7 ounces feta cheese, crumbled
    1/2 cucumber, chopped
    5 ounces spinach, roughly chopped
    4 scallions, shredded
Preparation
    Cook the quinoa according to pack instructions.
    Drain well then toss with the oil, vinegar, garlic and cumin while still warm and season.
    Toss through the rest of the ingredients and serve.
