Ultimate Chicken Quesadillas - cooking recipe

Ingredients
    2 cups cooked chicken (chopped or shredded)
    1 medium onion (diced)
    1 (4 ounce) can diced green chilies
    1 (10 ounce) can rotel (drained)
    1/4 teaspoon cumin
    1/4 teaspoon garlic salt
    16 ounces sour cream
    3 cups shredded cheddar cheese
    6 inches flour tortillas
    2 tablespoons vegetable oil
Preparation
    Saute onion, rotel, spices and chicken in a bit of the oil until hot. (I use a rotisserie chicken from the supermarket and I like to slice fresh mushrooms in to this mixture also).
    Spread some sour cream on 5 tortilla shells. I like it kind of thick.
    Spread the chicken and vegetable mixture, I use quite a bit.
    Sprinkle with cheese then top with another tortilla shell. Mash it down.
    Fry them in a bit of vegetable oil in a nonstick skillet for a couple of minutes on each side.
