Moroccan Shallot Relish - cooking recipe

Ingredients
    1/2 cup finely chopped shallot
    1/2 cup finely chopped flat leaf parsley
    2 tablespoons extra-virgin olive oil
    2 tablespoons fresh lemon juice (to taste)
    1/2 teaspoon salt (to taste)
    1/2 teaspoon pepper (to taste)
Preparation
    Combine all ingredients except salt and pepper in a bowl and toss to mix.
    Add salt and pepper and toss again.
    Best served within 2 hours of being made.
