Ema Datshi - cooking recipe

Ingredients
    1 1/2 cups cheese (dri or yak milk cheese or blue cheese like gorgonzola)
    6 medium red potatoes, thinly sliced with skin on
    2 1/2 lbs beef, cut in bite-sized pieces
    10 jalapenos (or similar)
    1 tablespoon minced garlic
    3 roma tomatoes, sliced lengthwise
    10 green onions (green part only)
    2 -3 tablespoons salt
    1 sichuan pepper
    4 slices American cheese
Preparation
    Slice potatoes and put aside.
    put rest of ingredients, except cheese slices, in pot.
    Add water to just cover.
    Cook on high 20 minutes,.
    Add potatoes, then cook on medium for 15 minutes.
    Adjust salt as needed. Add cheese slices for color if desired.
    Serve with rice on the side.
