Ingredients

2 tablespoons margarine
1/2 cup brown sugar
4 slices Texas toast thick bread or 4 slices thickly sliced bread
3 eggs, beaten
1 1/2 cups skim milk
1/4 teaspoon cinnamon
Preparation

Grease 8x8 pan.
In a small saucepan, melt margarine and brown sugar. Pour into baking pan. Place bread on top of the mixture. In a small bowl, beat eggs, milk and cinnamon together. Pour egg mixture over bread. Cover and place in fridge overnight.
Bake uncovered at 350F for 30 minutes or until lightly browned.
Serve with syrup and/or fruit. To add extra calories, add extra 2 tablespoons butter or margarine and use whole milk. Brunch/lunch is so easy when made the night before.
