Blue Moon Salad - cooking recipe
Ingredients

2 cups finely diced celery
1/2 cup dried cherries
1/2 cup crumbled blue cheese
1 tablespoon lemon juice
1 -2 tablespoon olive oil
salt and pepper
4 cups arugula, spinach or 4 cups sorrel, leaves cut in thin strips
Preparation

Combine celery, dried cherries and blue cheese in a bowl. Add lemon juice, olive oil, salt and pepper to taste. Toss gently.
Serve on small mounds of greens.
