Earthy Grilled Pork Chop Rub - cooking recipe
Ingredients

1/2 tablespoon allspice berry
1/2 tablespoon cumin seed
1/2 tablespoon coriander seed
1/2 tablespoon whole black peppercorn
2 bay leaves
1/2 tablespoon dried thyme leaves
1/4 cup brown sugar
2 tablespoons sea salt
1/4 teaspoon ground ginger
1/4 teaspoon smoked paprika
1/2 teaspoon paprika
1/2 teaspoon onion powder
1/2 teaspoon granulated garlic
1 -2 tablespoon of ground spices (first 6 ingredients)
Preparation

Heat a small skilled to medium-high. Add allspice, cumin, coriander, and peppercorns. Stir frequently and toast until seeds begin to pop and smoke a bit.
Add toasted spices, bay leaves, and thyme to spice grinder and grind into a fine powder.
Mix 1 tablespoon (or more, to taste) of ground spice mixture with remaining dry ingredients.
Rub healthy amount of rub onto meat and let rest in refrigerator for at least one hour, preferably more. Grill as desired.
