Cauliflower Soup - cooking recipe

Ingredients
    4 cups cauliflower, coarsely chopped
    1 tablespoon extra virgin olive oil
    1 small onion, chopped
    2 garlic cloves, minced
    3 cups chicken stock
    1/2 cup parmesan cheese, finely grated
    salt & freshly ground black pepper (to taste)
Preparation
    Heat oil in pot on medium heat.
    Add onion and garlic and saute until soft.
    Add cauliflower and chicken stock. Cook the cauliflower until it is tender, about 15 minutes.
    Using a hand blender, puree cauliflower until it reaches desired consistency.
    Add parmesan, salt, and peper.
