Low Fat Beef Barley Soup - cooking recipe

Ingredients
    1 tablespoon vegetable oil
    1 lb lean stewing beef, diced into small pieces
    1 tablespoon flour
    32 ounces fat-free beef stock (usually boxed)
    1 carrot, diced
    1 medium onion, diced
    1 stalk celery, diced
    3/4 cup pearl barley
    1/2 teaspoon thyme
    1 (14 1/2 ounce) can diced tomatoes
Preparation
    Add oil into skillet.
    Sear diced meat in pan.
    Add flour to pan and stir for 1 minute.
    Add beef stock to pan and stir.
    Add remainder of ingredients.
    Simmer 1-2 hours until barley is softened.
