Spicy Tomato & Prawn Salsa Bruschetta - cooking recipe

Ingredients
    400 g chopped tomatoes
    2 red chilies
    2 garlic cloves
    2 teaspoons dried sage
    1 teaspoon dried coriander
    1 tablespoon olive oil
    10 -15 large prawns
    15 g butter
    salt and pepper
Preparation
    Finely chop Garlic and Chillies,
    heat oil in a saucepan and add the Garlic, Chillies, Sage and Coriander and cook until fragrant then add the Tomatoes.
    Season and simmer for 10 minutes until thick and reduced.
    Add the prawns and continue to simmer until cooked.
    stir in butter and serve.
    Serve by pouring onto crispy toasted bread.
