Allergy Free Vanilla Frosting - cooking recipe

Ingredients
    1 (12 ounce) package extra firm tofu
    1/4 cup sugar
    1 teaspoon lemon juice
    1 teaspoon margarine
    1 teaspoon vanilla
    1 1 teaspoon vanilla extract or 1 teaspoon almond extract
    1/4 teaspoon salt
    1/4 teaspoon xanthan gum
Preparation
    drain tofu for at least 2 hours.
    discard liquid.
    combine all ingredients in food processor until smooth.
    use immediately.
