Sweet Potato Pudding - cooking recipe

Ingredients
    4 cups cooked peeled sweet potatoes
    1 lime, juice and zest of
    3/4 cup brown sugar
    2 large eggs
    2 tablespoons unsalted butter, softened
    1/2 cup coconut milk
    1/3 cup dark rum
    1/4 teaspoon salt
    1/2 teaspoon baking powder
    1/2 teaspoon nutmeg
    1 teaspoon cinnamon
    1/4 teaspoon ground ginger
    1/4 cup raisins
    1/4 cup coconut flakes
Preparation
    Preheat oven to 350\u00b0F.
    Place all ingredients except raisins. Blend well till nice and smooth.
    Mix in raisins and coconut.
    Pour into a buttered casserole pan and bake 50 minutes.
    Chill and serve with whipped cream.
