Crustless Mini Quinoa Quiches - cooking recipe

Ingredients
    2 garlic cloves, chopped
    1/4 teaspoon sea salt
    1/8 teaspoon pepper
    4 large eggs
    1 cup cottage cheese
    1 cup cooked quinoa, cooled
    2/3 cup roasted red pepper, chopped
    1/4 cup fresh basil, chopped
    1/4 cup grated parmesan cheese
Preparation
    Preheat oven to 350. Spray mini muffin tins with cooking spray.
    In blender, combine garlic, salt, pepper, eggs and cottage cheese until smooth.
    Transfer to a bowl and stir in quinoa, roasted peppers, basil and Parmesan.
    Divide quinoa mixture among prepared muffin tins.
    Bake 18-23 minutes or until tops are golden.
