Nana'S Red Velvet Cake - cooking recipe

Ingredients
    Cake Recipe
    2 cups wesson vegetable oil
    2 1/2 cups all-purpose flour
    1 1/2 cups sugar
    1 cup buttermilk or 1 cup milk
    2 eggs
    2 ounces red food coloring
    2 teaspoons cocoa
    1 teaspoon vinegar
    1 teaspoon baking soda
    1 teaspoon vanilla
    1 teaspoon salt
    Cream Cheese Icing
    1 (16 ounce) box powdered sugar
    1 (8 ounce) package cream cheese, softened
    1/2 cup butter, softened
    1 teaspoon vanilla
    1 cup chopped pecans (optional)
Preparation
    For the cake, mix all ingredients well using a hand held mixer. Mix until smooth consistency.
    Bake in three 8 inch layer cake pans at 350 degrees for approximately 35 minutes or until toothpick inserted in middle comes out clean.
    Let cake cool completely before trying to ice.
    For cream cheese icing, cream butter and cheese together using a hand held mixer.
    Add sugar, vanilla and nuts and mix well.
    Spready evenly on cake.
