Diabetic Mini Cornbread Muffins - cooking recipe

Ingredients
    1 1/2 cups yellow cornmeal
    1/3 cup coconut flour
    1 tablespoon baking powder
    1/2 teaspoon salt
    3 g stevia
    2 3/4 cups almond milk
    12 ounces diet Dr. Pepper soda
Preparation
    Preheat oven 350.
    Combine dry ingredients in a small bowl add wet.
    Mix until all ingredients are wet. Do not over mix!
    Grease mini muffin pan and use 1/4 cup to fill.
    Bake 15-20 minutes or until golden brown.
    Leftover can be frozen!
