Grilled Red Snapper - cooking recipe

Ingredients
    olive oil
    bacon grease
    3 lbs red snapper
    salt
    white pepper, &
    paprika
    1/2 cup butter, melted
    2 garlic cloves, crushed
    1/2 lemon, juice of
Preparation
    Heat large griddle to smoking point.
    Grease liberally with olive oil & bacon grease.
    Season & sear fish on both sides, turning carefully.
    Cook quickly for 3-5 minutes per side.
    Heat butter, garlic, & lemon juice to bubbling & serve over fish.
