Stuffed Baked Tomatoes - cooking recipe

Ingredients
    6 medium tomatoes
    3 tablespoons water
    1/2 cup onion, chopped
    1/2 cup red pepper, chopped
    2 jalapeno peppers, chopped
    1/2 cup green onion, chopped
    1 cup brown rice or 1 cup wild rice, cooked
    1/2 cup fresh parsley, chopped
    1 tablespoon soy sauce
    1 tablespoon basil
    1 pinch cayenne
    2 tablespoons parmesan cheese
Preparation
    Simmer the water, onion, red pepper, jalapeno& green onions until just tender.
    Scoop out the tomatoe pulp.
    Mix the tomatoe pulp, chopped, cooked rice, parsley, soy, basil& cayenne.
    Combine rice mixture and veggies.
    Stuff the tomatoes and sprinkle with the cheese.
    Place in lightly oiled pyrex dish.
    Bake at 375f for 20-25 minutes or until heated through and the cheese is nicely browned.
