Sweet Potato Omelet - cooking recipe

2 eggs
1 cup shredded peeled sweet potato
1/2 cup chopped onion
1 garlic clove, chopped
1 teaspoon salt or 1 teaspoon soy sauce
1 tablespoon vegetable oil
Preparation

1. In a small bowl, beat eggs with a fork. Stir in sweet potatoes, onion, garlic and salt until well combined.
2. Heat a medium skillet over medium-high heat. Add oil and swirl to coat the pan. Pour in egg misture; cook, turning once, until lightly browned on both sides, about 2 minutes per side.
