Best Ever Cajun Meatloaf - cooking recipe
Ingredients

1 1/2 lbs extra lean ground beef
1/2 cup onion, diced
2 garlic cloves, minced
1/4 cup fat free chicken broth
1/2 cup roasted red pepper, canned, diced
1/4 cup tomato paste
1/2 cup chili sauce, bottled
2 tablespoons cajun seasoning
2 tablespoons Worcestershire sauce
1 cup seasoned dry bread crumb
Preparation

Preheat oven to 350\u00b0F.
Saute onion and garlic in chicken broth until soft.
Stir in red peppers, tomato paste, chili sauce and Cajun spices.
Cook on low heat for 10 minutes; cool slightly.
In a large bowl, combine ground beef, sauteed onion mixture and bread crumbs.
Form into a loaf shape and place into ungreased loaf pan.
Brush with 2 tablespoons of chili sauce.
Bake until cooked through, 40-50 minutes.
Cool before cutting into slices.
