Diabetic Cornbread Muffins - cooking recipe

Ingredients
    1 1/2 cups cornmeal
    2 tablespoons sugar
    1/4 teaspoon baking soda
    1 1/4 cups skim milk
    1/4 cup unsweetened applesauce
    2 egg whites
    2 tablespoons cooking oil
    1/2 cup flour
    2 teaspoons baking powder
    1/2 teaspoon salt
Preparation
    Combine dry ingredients.
    Mix milk,applesauce,egg whites and cooking oil.
    Stir into dry ingredients until just moistened.
    Fill greased muffin cups 2/3 full.
    Bake at 400F 18-20 minutes.
