Lunchbox Pumpkin Muffins - cooking recipe

Ingredients
    3 eggs
    3 1/2 cups sugar
    3/4 cup oil
    2 cups pumpkin
    3 1/2 cups flour
    2 teaspoons baking soda
    1/2 teaspoon baking powder
    1 1/2 teaspoons salt
    1 1/2 teaspoons cinnamon
    1/2 teaspoon nutmeg
    1/4 teaspoon ginger
Preparation
    Beat together eggs, sugar, oil, and pumpkin.
    Sift together dry ingredients.
    Mix dry ingredients with egg and pumpkin mixture.
    Using 1/4c size muffin scoop, scoop batter into well greased muffin tin or into paper muffin cups.
    Bake at 350 degrees for 23 minutes.
