Creamy Pesto Chicken Soup With Potato Gnocchi - cooking recipe

Ingredients
    2 tablespoons butter
    1 onion, finely chopped
    8 cups chicken stock
    1 teaspoon salt
    1 cup whipping cream
    1/4 cup basil pesto
    1 lb prepared gnocchi
    3 cups shredded cooked chicken
    1/4 cup chopped fresh parsley
    2 teaspoons lemon juice
Preparation
    In a large pot, melt butter. Add onion and saute until softened. Add stock, salt and pepper; bring to a boil.
    Stir in cream and pesto; bring to a simmer, stirring often. Do not let boil.
    Add gnocchi and simmer 3 minutes. Add chicken, parsley and lemon juice. Taste and adjust seasoning with salt and pepper.
    Serve garnished with parsley.
