Polynesian Cake And Cream Frosting - cooking recipe

Ingredients
    2 cups all-purpose flour
    1 cup oil
    1/2 cup water
    2 cups sugar
    3 eggs
    1 teaspoon baking soda
    1 teaspoon baking powder
    1 cup chopped walnuts
    1 (6 1/2 ounce) can crushed pineapple in juice
    1 cup shredded coconut
    2 cups shredded carrots
    Frosting
    1/2 pint heavy whipping cream
    1 (3 1/2 ounce) package vanilla instant pudding mix
    1 cup milk
Preparation
    Combine all ingredients in a large bowl and mix with a spoon. Pour into a greased and floured 13X9 baking pan and bake at 350* for 50 minutes. Cool.
    Prepare frosting by whipping all ingredients together and cover cake. Garnish with coconut and refrigerate.
