Cool As A Cucumber Salad (Grand Prize Winner) - cooking recipe

Ingredients
    1 tablespoon unflavored gelatin (1 envelope)
    1/4 cup cold water
    1/2 cup hot water
    1/4 cup sugar
    1 cup well drained grated cucumber
    1 cup thick sour cream
    2 tablespoons lemon juice
    1 tablespoon grated onion and juice
    1/2 teaspoon salt
Preparation
    Soften gelatin in cold water; set aside.
    Combine hot water and sugar in small saucepan. Heat to the boiling point.
    Remove from heat. Add softened gelatin, stirring to dissolve. Pour in medium bowl and chill until slightly thickened.
    Fold in cucumber, sour cream, lemon juice, onion and juice and salt.
    Pour into mold and chill until firm.
    Unmold and garnish as desired.
