Ranch Beef Skillet Supper - cooking recipe

Ingredients
    1 lb lean ground beef
    1 small onion, diced (optional)
    1 (7 ounce) box seasoned black bean and rice mix (Zatarain's brand)
    1 (10 ounce) package frozen corn
    1 (14 ounce) can diced tomatoes
    2 1/2 cups water
    1 cup cheddar cheese, shredded
    1/2 cup cilantro, chopped
Preparation
    Brown beef and onion in a large skillet til beef no longer pink.
    Drain off excess grease. (I use a paper towel and run it across the bottom of the pan, soaking up the grease.
    Stir in rice and beans, tomatoes, corn and 2-1/2 cups water.
    Bring to a boil, reduce heat, cover and simmer for 20 minutes or until water has been absorbed.
    Meanwhile chop cilantro.
    Sprinkle with cheddar cheese and cilantro.
    Enjoy!
