Great Grandmas Deviled Potatoes - cooking recipe

Ingredients
    12 medium red potatoes
    12 eggs
    1/2 cup mayonnaise
    2 teaspoons Dijon mustard
    1 teaspoon salt
    1 teaspoon pepper
    1 tablespoon chives, chopped
    2 teaspoons paprika
Preparation
    Hard boil the 12 eggs and separate the egg yolks.
    In a separate pan, boil the red potatoes until tender. Let cool while assembling the filling.
    Separate the egg yolks from the whites and mash in a bowl with a fork.
    Add the mayonnaise, Dijon mustard and season with salt & pepper. Stir well to combine.
    Put the egg yolk mixture into a piping bag and let chill.
    Cut the potatoes in half length wise. Scoop out a small well for the filling, about a tea-spoon size.
    Pipe the yolk filling into the potato. Top with paprika and chives to taste.
