**Copycat** Costa Vida Green Rice - cooking recipe
Ingredients

2 tablespoons lime juice
2 -3 garlic cloves, minced
1/2 cup cilantro, fresh
1 (2 ounce) can green chilies
2 teaspoons salt (may omit if using salty broth)
1 onion, medium
1 tablespoon butter
1 1/2 cups rice, white long grain
3 cups chicken broth
Preparation

Chop veggies/herbs coarsely and then fry in 1 T butter or oil.
Add rice and stir to coat and then add broth, salt and lime juice. Bring to rapid boil, turn down as low as possible, cover and simmer about 20 minutes - do not stir! Fluff with fork.
