Cranberry Brie Salad - cooking recipe
Ingredients

1/2 cup dried cranberries
1/4 cup port wine
4 ounces brie cheese, chopped
1 head butter lettuce (cut or torn, about 1 1/4 cups)
2/3 cup seasoned croutons
CRANBERRY DRESSING
2 tablespoons olive oil
2 tablespoons cranberry juice cocktail
1 tablespoon basil pesto
1 tablespoon red wine vinegar
Preparation

Into a small bowl, measure cranberries and port. Let stand for 1 hour, stirring occasionally. Drain. Discard port.
In a large bowl, place cranberries, cheese, lettuce and croutons. Toss.
CRANBERRY DRESSING: In a jar with a tight-fitting lid, combine oil, juice, pesto and vinegar. Shake well. Makes 1/3 cup dressing.
Drizzle dressing over lettuce mixture. Toss.
