Peppermint Liqueur - cooking recipe

Ingredients
    1 1/4 cups sugar
    1 1/4 cups water
    2 1/2 cups brandy
    3 drops peppermint oil
    3 drops green food coloring (optional)
Preparation
    Combine the sugar and water in a small saucepan. Bring to a boil and stir to dissolve the sugar.
    Stir in the peppermint oil and green food coloring if using.
    Allow to cool slightly before stirring in brandy.
    Pour into a bottle and seal.
    Tastes best after a couple of weeks.
