Banana Coffee Muffins - cooking recipe

Ingredients
    2 1/2 cups unsifted all-purpose flour
    1 cup sugar
    1/2 teaspoon salt
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1 tablespoon instant coffee granules
    1 tablespoon hot water
    1 cup margarine or 1 cup butter
    1 egg
    1 1/3 cups mashed bananas (about 4 bananas)
    1 cup semi-sweet chocolate chips
Preparation
    Prheat oven to 400 degrees.
    Line 2 dozen muffin cups.
    Stir together flour, baking powder, baking soda and salt. Set aside.
    Dissolve coffee in the hot water and stir into bananas.
    Beat together sugar and butter until fluffy.
    Add egg, then banana mixture.
    Stir in flour. Mix until well blended.
    Fold in chocolate chips.
    Divide into cups.
    Bake for 25 - 30 minutes.
    You can put it into 2 loaf pans and bake at 350 degrees for 45-50 minutes until a toothpick comes out clean too!
