Fabulous Sweet Potato Casserole - cooking recipe

Ingredients

1/2 cup brown sugar
1/4 cup flour
1/2 cup chopped pecans
1/2 cup coconut
1/4 cup melted butter
3 cups cooked mashed sweet potatoes
1 cup sugar
1/2 teaspoon salt
1 teaspoon vanilla
2 eggs, well beaten
1/2 cup butter, melted

Preparation

Combine brown sugar, flour, pecans, butter and coconut. Set aside .This is the crust.
Combine mashed sweet potatoes, sugar, salt, vanilla, eggs and butter. Beat thoroughly.
Pour into a greased baking dish.
Bake at 350 degrees for 30 minutes. At this point dish can be covered and refrigerated.
Sprinkle the surface of the sweet potato mixture evenly with the crust mixture and return to oven for 10 minutes.
Allow to set at least 30 minutes before serving.
