Pepper Jack Meatloaf - cooking recipe

Ingredients
    1 egg
    1 cup seasoned bread crumbs
    1/4 cup of chopped onion
    1/2 - 1 teaspoon salt
    1/2 teaspoon pepper
    1 - 1 1/2 lb lean ground beef
    1 cup shredded monterey jack pepper cheese or 1 cup monterey jack cheese, divided
Preparation
    Preheat the oven to 350 degrees.
    In large bowl combine the egg, bread crumbs, onion, salt and pepper.
    Crumble beef over mixture and mix well.
    In a 8x4-inch greased pan press half of the beef mixture onto the bottom and halfway up the sides.
    Sprinkle 3/4 of a cup of cheese over meat within 1/2 in of sides.
    Pat remaining beef mixture over cheese.
    Bake uncovered for 50 - 55 minutes.
    Sprinkle the remaining cheese on top and bake for another 5 minutes or until cheese is melted.
    Let stand for 10 minutes before slicing.
