Julia Harrison Adams' Pimento Cheese Spread - cooking recipe

Ingredients
    1/2 lb mild yellow cheddar cheese
    1/2 lb sharp white cheddar cheese
    4 1/2 ounces pimientos, with juice
    1 cup chopped scallion
    1/2 cup mayonnaise
    2 teaspoons fresh lemon juice
    1 teaspoon minced garlic
    1 tablespoon Worcestershire sauce
    6 dashes Tabasco sauce
    1/2 teaspoon fresh ground black pepper
Preparation
    Grate cheese and place in large bowl. Add pimentos and juice and the scallions.
    Combine mayo, lemon juice and garlic. Add to cheese mixture. Add worcestershire, Tabasco and pepper and mix well. Taste and adjust seasonings.
    Serve at room temp with crackers or veggie dippers. Will keep several days in fridge.
