Moist & Spicy Coconut Oatmeal Cake - cooking recipe

Ingredients
    Mix and set aside
    1 cup oatmeal (regular or quick)
    1 1/2 cups boiling water
    Beat together
    2 eggs
    1/2 cup oil
    1 cup sugar
    1 cup brown sugar
    1 tablespoon vanilla extract
    Mix in
    1 teaspoon baking soda
    1 teaspoon cinnamon
    1/2 teaspoon nutmeg
    1/2 teaspoon allspice
    1 1/2 cups flour
    add oatmeal, Mix together
    Topping
    1/2 cup melted butter
    1 cup chopped walnuts or 1 cup pecans
    1 cup brown sugar
    1 cup coconut
    1 egg
Preparation
    Mix Oatmeal and boiling water together first to get things started; Beat together eggs/oil/sugar vanilla, then add the rest and mix well.
    While the cake is in the oven, make the topping; bake the cake in greased 9\"X13\" cake pan for 35 - 40 minutes at 350 degrees.
    Pull the cake out, spread the topping to completely cover the cake surface, and bake 15 - 20 minutes more. This cake tastes great fresh, but gets even better after waiting for a day.
