Potatoes With Red Bell Pepper And Mushrooms - cooking recipe

Ingredients
    4 tablespoons olive oil
    1 medium onion (chopped)
    1 red bell pepper (diced)
    1/4 lb mushroom (sliced)
    1 large boiling potato
    1/2 cup white wine
    1 cup chicken broth
    salt and pepper
Preparation
    Cook onion, mushrooms and red pepper in olive oil, stirring until softened, about 5 minutes.
    Stir in potatoes, white wine and chicken broth and simmer covered for 20 minutes.
    Add salt and pepper to taste.
